A zesty combination of flavor, texture and aroma, achar gosht is a representation of royal South Asian cuisine. Long green chillies are slit on one end and stuffed with Kausar’s roasted spice blend, lemon juice and kept aside. Meat or chicken is then cooked in onion, tomato and yogurt base gravy with Kausar’s roasted spice blend further added to give the dish that achari flavor and texture. Once the meat is well done, stuffed chillies are added to it and further simmered for a few minutes till the meat and chillies are well coated with the achar masala. With a squeeze of one lemon, thinly sliced ginger and coarsely chopped coriander leaves, the dish is complete. Served with hot nan, the dish is true indulgence.
