This mouthwatering dish is a feast in it self and can be made using whole mutton leg / shoulder or cut into pieces. In most households the mutton leg is cut into pieces and pressure-cooked till tender. It is then added to the pan of fried onions, tomatoes, whole dried red chilies, Kausar spices and stirred till the meat is well coated. Water is added at this stage and pot is covered with a lid. The meat is left to simmer for a few minutes till the water has reduced to a semi-dry gravy and the meat has absorbed all the flavors. Garnished with roasted cashews and curry leaves along side golden fried potato wedges is the perfect mutton roast to be enjoyed with friends and family.
